Although the only ingredients in this sauce that came from my garden were the zucchini and basil, this sauce is bursting with fresh garden flavor AND nutrients! The best part? The use of a crock pot! Keeps your kitchen temperature down and gives you time to get things done. Enjoy!
Pour contents of both cans of tomatoes and 1/4 cup white wine into your crock pot. Place heat at “Low”.
While they warm thaw spinach in microwave. Drain and add to crock pot.
Chop zucchini into mid-size chunks and cook in a skillet with sausage over medium-high heat until both are cooked thoroughly. Then remove from heat and cut sausage lengthwise and then into chunks.
Add to crock pot along with torn basil leaves.
Place lid on crock pot and let the flavors meld together for a few hours.
This can be served over pasta, used as pizza sauce or bruschetta topping. The possibilities are practically endless!
