Garden Sass is an all-but-forgotten traditional American recipe for enjoying the freshest garden vegetables. Served over greens and bacon (as described in the related link) it is a unique first course, salad, or vegetable side dish. Alone it is an unsurpassed fresh vegetable relish.
A note: The recipe for homemade French dressing given below has a balance of sweet, sour and spice that complements Garden Sass well.
How to use Garden Sass: Garden Sass is especially good served over warm wilted greens (as in the related link) or as a fresh relish.
Making the Garden Sass:
1. Mix all the ingredients together in a bowl and chill for 2 hours.
Making the French dressing:
1. Place all the ingredients in a lidded glass jar. Cover it and shake well. If the dressing isn’t used right away, shake it up again right before adding it to the Garden Sass.
An acknowledgement: The Garden Sass recipe is adpated from one in Beth Tartan’s “The Good Old Days Cookbook” (1971. The French dressing recipe is based on one in the second printing of the first edition of the “Better Homes and Gardens New Cookbook” (1953).
