Rich and earthy, this Creamy Mushroom Sauce is just the thing to fancy up those chicken breasts that are gazing up at you balefully from the kitchen counter.
Add oil or butter to 12-inch skillet over medium high heat, until shimmering. Add mushrooms and salt and brown, 6 minutes. Add shallots and cook unti soft, about 2 minutes.
Add wine and cook until dry, 1 minute. Stir in cream and broth and simmer until thickened, 12 minutes.
Add a few grinds of fresh pepper and adjust salt to taste.
