This quick cilantro pesto is the perfect addition to cheesy quesadillas, crunchy tacos and is also delicious tossed into a mixed pepper stir-fry. Cilantro lovers, unite!
Combine cilantro, garlic, pine nuts and 1/4 cup of the olive oil in a food processor.
Whiz together until well-combined. You can add more oil as you go along depending on how thin or thick you want your pesto.
Season with salt, pepper and freshly squeezed lime juice.
Mix well, and store in a sealed container in the refrigerator for up to 5 days.
