Creamy and spicy, this sauce can be added to anything you want to add a little more heat to. A little goes a long way! Try it with chicken, on sandwiches or burgers … let your imagination run wild!
Empty the can of chipotle and adobo sauce into a food processor. Pulse a few times to get it started, then turn it on continuously. Add your oil in a slow stream while processor is going. Scrape down the sides and blend until smooth.
Now comes the fun part. Get a small bowl, spatula and a fine mesh strainer (I use my splatter screen). Take a couple of tablespoons of the sauce and push it through the strainer into the bowl. This will take out the seeds. Scrape out the seeds in the strainer (discard) and add a couple more tablespoons of sauce. Keep processing this way until you’re done. You could absolutely skip this step, but I like my end result to be smooth.
