This blueberry syrup can be used warm or cold, and is great on pancakes or ice cream—or in our Spiked Blueberry and Lemon Sweet Tea!
In a small saucepan, combine sugar, cornstarch and salt. Gradually whisk in water until smooth. Add the blueberries, vanilla essence and lemon zest, then bring to a boil over medium heat, stirring constantly until thickened, about 2 to 3 minutes. Remove from heat and use as desired.
