If you like blue cheese, this tangy, pungent butter is a great way to dress up your favorite steak.
If you are in a hurry and have no time to wait for the butter to soften, just grate the cold butter and let it sit at room temperature for 10 to 15 minutes, after which it will be soft enough to be used in this recipe.
Mash parsley, garlic, and blue cheese into the butter with a fork. The mass will be relatively thick. Shape it into a rough log with your fork. It is now ready to be sliced and spread on top of the steak; no additional chilling time is needed as the blue cheese alone will make this mass fairly thick and sliceable.
