Perfect condiment to have on hand using fresh seasonal bing cherries.
In a blender or food processor, add pitted cherries. Pulse several times then run blender 1–2 minutes. Transfer cherries to a saucepan over high heat and add water and sugar. Bring to a boil, then reduce heat and cook, covered, for 2–3 minutes.
Remove from heat and let cool. Transfer to a mixing bowl and add blue cheese, stirring gently to combine. Cover and refrigerate until ready to serve.
We love to use this as dressing for a romaine salad but you can also use this sauce on many other dishes. Hope you enjoy!
