Basil pesto with a bit of white wine.
Toss the garlic cloves (with skin on) into the toaster oven and roast at about 400 degrees for about 8 minutes until brown. Chop it up real small-like.
Combine the basil with the pine nuts and pulse a few times in a food processor. Add the garlic, pulse a few times more.
Slowly add the olive oil a teeny bit at a time or in a constant stream while the food processor is on. Stop a couple of times to scrape down the sides of the food processor with a rubber spatula.
Add the grated cheese and pulse again until blended. Add the wine and a pinch of salt and freshly ground black pepper to taste.
Warm in a pan or microwave to serve over pasta.
