One of my favorite sandwiches is Banh Mi. It is a simple sandwich made with sliced pork, pickled vegetables and cilantro packed on a baguette. My favorite part is the pickled vegetables. I can snack on them morning noon and night: crisp and sweet with a touch of spice.
1. Cut cucumbers and carrots into matchsticks (or whatever shape you prefer).
2. Slice jalapeno pepper into rounds.
3. Add the vegetables to a jar with peppercorns and start anise.
4. In a measuring cup, add sugar, salt, vinegar and hot tap water. Whisk really fast and pour over vegetables.
5. Cover, and in a couple of days, you’ll have pickles.
