This light, fresh relish goes well with burritos, tacos, omelettes, sandwiches, or just with chips. You can play with the tomato/avocado ratio as you like.
Peel and dice the avocados. Put in a bowl and squeeze the lemon juice over them to keep them from turning brown.
Seed and dice the tomatoes and add to the avocados.
Chop the green parts of the green onions and add to the mix.
Stir and serve immediately or refrigerate for up to an hour.
