This is a quick and easy way to both extend a dressing and add fats to improve the macros with no added carbs. The same technique can be used with any low carb/low fat dressing. Suitable for gluten-free, Atkins, keto, lchf, low carb, diabetic, low glycemic, dairy-free.
Mix all ingredients in a small blender to emulsify. Transfer to jar or bottle with a lid.
Store in refrigerator for up to several months.
Makes 1 cup of dressing (8 servings of 2 tablespoons each).
Nutritional information (estimates are per serving based on exact ingredients I used, calculated with a free online recipe analyzer, for 2 tablespoons of dressing per My Fitness Pal): Calories 80, Total Fat 9 g, Saturated Fat 1 g, Sodium 180 mg, Potassium 5 mg, Total Carbohydrate 1 g, Dietary Fiber 0 g, Net Carbs 1, Sugars 1 g, Protein 1 g. Macros: 91% fat, 4% protein, 4% carbs.
