These banana waffles are so fluffy, flavorful and warmly spiced. Topping them with an amazing banana bourbon sauce sends them way over the top!
First, prepare the batter. Whisk the flour, brown sugar, baking powder, cinnamon and salt together in a large mixing bowl to aerate the dry ingredients. In another bowl, whisk the milk, mashed banana, eggs and banana extract together. Pour those wet ingredients into the bowl of dry ingredients and whisk it together just until it is a smooth batter. Cover the bowl and let it rest in the refrigerator for 30 minutes to let the gluten relax.
While the batter rests, make the banana bourbon sauce. Combine the water, sugar, pumpkin pie spice and banana in a small pot and heat it on the stove over medium high heat. Let it come to a gentle boil and cook for 5 minutes, stirring occasionally. Stir in the bourbon and let the sauce gently boil for another 10 minutes or so. It should become a thick, syrupy sauce. Turn the heat to the lowest setting and move the pot slightly off of the burner to just keep the sauce warm.
Once the batter is rested, pre-heat your waffle iron. Be sure to read the instructions on your particular waffle iron to get the best results. Scoop 1/4 of the batter into the iron, just enough to cover the bottom. Close it and cook the waffle for 5 to 5 1/2 minutes to let it get golden and just slightly crispy around the edges. Serve it immediately when it is done with the warm sauce, banana slices and walnuts on top! Repeat with the rest of the batter to get 4 total. Enjoy a scrumptious brunch!
