This crepe recipe might seem simple, but don’t be fooled—they are the ultimate crepe recipe. You can use these with savory or sweet fillings. These crepes are brought to you by Adventures in Lunch.
Add the butter to the milk. Whisk until combined. Add the eggs and salt. Beat until no egg is visible. Add the flour and whisk until there are little to no lumps (this can also be done in a blender). Let the mix sit for 15 minutes, refrigerated. Whisk/beat/blend the mixture one more time to ensure there are no lumps.
Preheat an 8-inch nonstick skillet. Using cooking spray or butter, lightly grease the pan. Add about 1/4 cup of the crepe mix, using a circular motion to move the mix around, until the bottom of the pan is fully coated. Flip once the mixture is no longer runny. Cook an additional one minute on the opposite side.
Transfer to a plate. Repeat until mixture is gone. You should end up with about 8 crepes.

My Grandmother used to make these for us when we were kids. My parents came here from Yugoslavia and over there they called them, Palacinke. I sure do miss them. I will have to try out your recipe.
