This is a simple go-to dish or breakfast or dinner (remember that here in Mexico, dinner is light and the main meal is at lunch time). You can find all types of Sincronizadas, but these are the simplest and very yummy!
In a non-stick pan, warm up the tortillas a little bit. Divide the cheese into two equal parts. Grab one and place half of the cheese one of the tortillas, making sure to make it even (like adding cheese to a pizza!). Then on top of the cheese, place 3 slices of ham, and on top of the ham, the other half of the cheese. Place another tortilla on top (by this point, it sort of resembles a tortilla sandwich).
Cook the sincronizadas in the same pan. It takes about 1 minute on each side, but it may vary. Just keep an eye on the tortillas, making sure they are crisp but not burned; also be warned that some cheese may drip onto the pan. Repeat the process with the other 2 tortillas to get a second sincronizada. And you are done!
Serve whole on a plate with a little salsa, or like me, just cut it in half and eat it with a jalapeño. Yum!
