Traditional Swedish Pancakes – a super thin crepe topped with the classic lingonberries or raspberries, strawberries, with whipped cream. Perfect for a Sunday breakfast, or dessert. I should mention that nearly every country in Europe has their own version of this, with different fillings. In Sweden, this is called “Plattar”. (There are umlauts in there, but my keyboard is ill equipped.)
Bring all ingredients to room temperature, then melt the butter.
Mix all ingredients together kind of slowly so you don’t get lumps in your batter.
Heat your griddle, and pour a little of the pancake batter on, thin it out with your spoon. When the pancake starts to look like it’s firming up, it’s time to flip it.
Let it cook another minute or so on the second side, then place on plate.
Cook the whole batch at once. The batter does not refrigerate well.
When all your pancakes are cooked, fold them into quarters to serve. Place them on the plates, usually 4 to a person (there will be extras) and top with a tablespoon of lingonberry preserves, sliced sugared strawberries or raspberries and a dollop of whipped cream.

Lizzy, it kind of depends on how big you make them I guessed on the number of servings – but it should make 16 or better.

Ohhh lingonberries…love them but as far as I know…you can’t find them where I live.

We called them “German pancakes” too and we ate them with lemon juice and powdered sugar. So good!
I was wondering, it says that the recipe makes 4 servings and you suggest 4 pancakes per person. So does this recipe make 16 pancakes in total?

I grew up calling these “German Pancakes” . My in-laws introduced them to me. They open them up and slather peanut butter, cottage cheese and banana, then roll them up and pour maple syrup on them. Pretty filling. The “crepe” itself could be used for sweet or savory filling. Very nice basic recipe to have on hand. rs
