An embellishment of ‘egg in a cup’ and a very filling breakfast for manly men.
Prepare stuffing according to directions on box. While stuffing is cooking, add a bit of olive oil to a skillet and saute onions over medium heat. When these are cooked through, add mushrooms and garlic. Cook for 2-3 minutes and add spinach. Salt and pepper to taste.
Cut mettwurst sausages into cubes. Toss in with the vegetables and cook for about 5 minutes, stirring frequently.
Split the stuffing into two servings. Put a serving of stuffing into a bowl (I like to use a pasta bowl). Cook 2 eggs for each bowl, over-easy. Slide the cooked eggs on top of stuffing. Put half of vegetables and sausage over each bowl. Top with a bit if shredded cheese.
To eat, break the yolks and start mixing. Eat when well combined.
You can use any meat or omit entirely. We make it with bacon, sausage, and country ham depending on what we have on hand.
