So good even your kids will want to eat it. And it really sticks to the ribs!
In large bowl, mix together oats, brown sugar, graham cracker crumbs, coconut, salt, baking soda, and cinnamon. Add melted butter, and mix well.
Preheat oven to 300F.
Pour onto large baking pan(s).
Bake for 45 minutes. During the first half hour of baking, stir every 15 minutes. For the last 15 minutes of baking, stir every 5 minutes.
After baking is finished, mix in peanut butter and chocolate chips and put the pan back into the hot oven for 2 minutes to allow the chips to melt slightly.
Let the mixture cool completely, then store in an airtight container.
This recipe is very versatile. You can add anything else you desire. Dried fruits are delicious!
We prefer the almost “like candy” style of this receipe, but it is by no means low-fat!

I was intrigued by the addition of graham cracker crumbs, so I had to try this recipe, but once I’m in the kitchen, all bets are off and I change things up quite a bit. So, all I can really comment on is that the addition of graham cracker crumbs adds a really nice layer of flavor and good texture!
