Tired of eating oatmeal in a bowl? How about on a plate? Try these delicious pancakes and never look at oatmeal the same way again.
Place all ingredients in a blender. Blend the mixture for 20 seconds, or until smooth. Spray a skillet with cooking spray. Heat over medium heat. Pour 1/4 cup of pancake mixture in the pan. Cook until the pancakes are dry and bubbly on the edges, and bubbles appear on top. Turn and brown the other side. Serve with applesauce, bananas, strawberries, or maple syrup.
