I’m always looking for an easy breakfast that I can eat on the go. After getting tired of store-bought granola/energy bars, I started playing around with a traditional chocolate chip cookie recipe. These bars are filling and delicious. The combination of fiber and “good” fats (from canola oil, walnuts and flax seed) will keep you satisfied! Also, they freeze really well.
1. Preheat oven to 375 F.
2. Combine flours, baking soda, salt, oats and ground flax seed in a medium-sized bowl.
3. Blend sugar, brown sugar, butter, canola oil, vanilla extract and eggs in a large bowl until creamy. Gradually mix in the flour mixture.
4. Stir in chocolate chips and walnuts.
5. Pour mixture into an ungreased glass 9″ x 12″ baking pan.
6. Bake for about 15 minutes or until a sharp knife can be inserted and comes out clean.
7. Allow to cool then cut into squares. These freeze extremely well!
Notes:
Try to use as many organic ingredients as possible.
Ground flax seed should be stored in the fridge.

Thanks for the comments! I’ve updated the recipe from cookies to bars (I find them a bit easier to make and people are more receptive to eating them for breakfast) but otherwise they’re the same.

I love these cookies so much. I’ve made them 3 or 4 times in just the past 3 months. My friends have started to request them. . .

Very good! I used coconut oil in place of canola oil and added cinnamon and nutmeg to make them kind of oatmeal breakfast cookies! Very moist and delish at 9 min exactly.

Excellent cookies with lots of fiber. Would definitely make these again.
