A delicious, easy way to enjoy leftovers, whether they’re from Turkey Day or any other meal.
All right, so this is really more of a breakfast skillet than a bake, but I had to go for the alliteration. I’m sure this could easily be done in larger quantities in a baking dish in the oven, but I prefer the speed and simplicity of the stovetop. Also, the type and amount of ingredients is extremely flexible and can be adjusted according to personal taste and the contents of your fridge!
Begin by heating a small pan (that can withstand the broiler) over medium heat with a little butter or oil. Add whatever combination of meat you’ve decided on and allow to heat for a minute, stirring. Add stuffing, stirring to break up large chunks.
While stuffing heats, season beaten eggs with salt, black pepper, and any other herbs or spices you desire. Pour eggs over meat and stuffing, ensuring the entire pan is covered. Lower heat slightly and cover pan until eggs begin to set. You may run a spatula along the edge of the pan to check the bottom of the eggs. If they’re browning too quickly, lower the heat. Once eggs are mostly set, sprinkle the top with cheese and pop the pan under the broiler to finish cooking the eggs and melt the cheese.
For maximum deliciousness and optimal leftover utilization, serve each portion topped with warmed gravy. Who says leftovers are boring?
