Hearty, filling breakfast.
1. Boil 10 eggs; you want them hard boiled. Place cooked eggs in cold water for a few minutes for easy peeling. Peel your eggs then put aside.
2. Take your room temperature packs of sausage. You are going to divide each package into 5 sections per package.
3. Flatten the sausage evenly in your palm, place a hard boiled egg in the center of the flattened pattie and mold the sausage around the egg. Roll the egg in your hand to distribute the sausage around the egg evenly. You do not want any egg showing through.
4. Next, put your dinosaur eggs in either a large cast iron pan (my preferred method) or baking sheet. Be sure to coat the pan with cooking spray so they do not stick. You will place them in a preheated 350 degree oven for approximately 40 minutes.
5. Be sure to turn your eggs every 5 minutes or so for even browning. Be careful when handling (use tongs if possible) so the sausage does not come off the eggs.
6. When done, place the dinosaur eggs on a large paper-towel-lined plate and soak up any excess grease. Let cool and serve. These are very filling and reheat nicely in a microwave.

Have never heard this referrd to as Dinosaur Eggs–only Scotch Eggs. This is a popular pub food in London where I first encountered them 25 years ago. There, they take a soft boiled egg and form a thin layer of sasuage around it using ice water to place your hands in to work between forming the sausage around the egg. The heat from your hands melts the fat in the sausage so the cold water helps in reducing this problrm. After you have the sausage molded around the egg they are then dipped into milk and rolled in panko bread crumbs and dropped into a basket for deep frying till the sausage is done and the crumb coating is beautiful brown and crispy. They are enjoyed with a mustard or horseradish sauce. Brings back fond memories!
