They are chewy, yummy, and healthy yet hearty!
Preheat oven to 350ºF. Add all of the ingredients to a medium-sized bowl. Stir to combine.
Pour the mixture into a 9×9 baking dish, either lined with parchment paper or coated with cooking spray. I only have one small square baking dish, so mine were in a round quiche baking dish. I didn’t have straight edged squares. Don’t be like me!
Bake for 40 minutes. Let cool, then cut into squares. I wrap them individually in plastic wrap and toss them in the freezer. In the morning, I just grab and go to eat it later or pop it in the microwave to eat it immediately.
This is a great recipe and the options are endless! When I made these the first time, I used walnuts instead of pecans and raisins instead of blueberries. I think they would be good with coconut or white chocolate chips or dried cranberries. I think you get the point!
