A potato, egg, bacon, sausage jumble!
Prep work:
Peel potatoes and slice in 1/2″ thick round pieces. The thinner the pieces the faster they will cook. If you like thicker pieces just let it cook longer.
Peel onion and cut in half, then dice one half of the onion into small pieces (optional). My kids don’t like the onion so I leave it out if everyone is home.
Chop the tops of green onions or chives to get 1/4 cup. This is optional too but I love the flavor it gives to the breakfast mess.
Cut bacon and sausage into bite size pieces. Whatever bacon or sausage you prefer. I use very lean bacon and link sausage.
Cook:
Put oil into large skillet with high sides. Turn on medium-high until oil gets hot. Pour in potatoes, yellow onions, bacon, sausage, salt and pepper. Cover with a lid.
While this is cooking, beat your eggs in a bowl.
Stir ingredients in pan several times until potatoes start to brown and become soft. When potatoes become soft add in green onions and scrambled eggs.
Stir constantly so eggs get done. Once eggs are done remove from heat.
Serve hot with shredded cheddar cheese on top. Give cheese time to slightly melt.
My family likes to put salsa or ketchup on top. My husband likes two fried eggs on top also.
You can double or half this recipe depending on how many people you have eating. Makes a good breakfast or brunch.

This is probably a doofus question, but is the sausage and bacon already cooked when you throw it in, or does it cook along with the potatoes and onions? Thx in advance.
