I’m not a big eggs and bacon kinda gal for breakfast, but every once in a while, it sounds good to start the day with some eggs and bacon. My two little darlings like to change up breakfast from time to time, too. So I thought that I’d share my quick breakfast melts as a good morning option. It’s cheaper than going to a burger joint and faster than waiting in line, so why not?
In a large skillet, place bacon strips and cook until crisped over medium-high heat. Remove bacon and place on a paper-towel-lined plate to allow grease to drain.
While bacon is crisping, add eggs, milk, sea salt and pepper into a medium mixing bowl. Beat eggs until bubbles appear on the surface.
In a medium skillet, melt 1/2 tablespoon of butter over medium-high heat. Add eggs to the skillet. While eggs cook, gently lift the sides with a spatula, allowing the uncooked egg to seep under and be cooked. Continue the process until the majority of the eggs have cooked. When there is just a thin layer of uncooked egg on top, carefully flip the eggs and allow another minute for them to finish cooking. When eggs are done, remove from the skillet, place on a plate and put into the microwave to keep warm.
Take slices of bread and spread butter on both sides.
Place bread slices into the skillet (or onto a griddle) and allow the slices to brown over medium-high heat, about 1-2 minutes. When browned, flip bread slices and allow the opposite side to brown.
While browning, place a slice of cheese onto each piece of bread. Place 2 strips of bacon on top of the cheese and on the opposite slice of bread, place 1/2 of the eggs onto the cheese.
When bread has finished browning, bring egg and bacon slices together to form a sandwich. Repeat with the remaining bread slices.
Serve and enjoy!
