Simple quick bread, perfect for breakfast, lunch or snack! A great way to use all those giant zucchinis in your garden!
Preheat oven t0 375F. In a large bowl, mix sugar, oil, eggs, vanilla and zucchini. In a medium bowl, whisk (or sift) dry ingredients. Add dry ingredients to wet ingredients and lightly mix just until combined. Fold nuts and raisins into batter. Pour into greased and floured loaf pans. Bake until a toothpick comes out clean, approximately 45-50 minutes.
