Description

Sweet and tangy grilled zucchini. Roast it right on your grill for wonderful flavor and no clean up!

Ingredients

  • 2 whole Zucchini, Sliced Lengthwise, 1/8" Thick
  • ¼ cups Balsamic Vinegar
  • 1-½ Tablespoon Olive Oil
  • ½ teaspoons Honey
  • 2 pinches Salt
  • 1 pinch Pepper

Preparation

In small bowl whisk vinegar, oil and honey. Slice zucchini and place in 1 layer in a pyrex dish. Season with salt and pepper. Pour dressing over zucchini, turning to coat. Let marinate for at least 30 minutes up to 2 hours.

Preheat grill on high and then turn down to medium. Spray grates to grease. Lay zucchini directly on grill. Cover and cook 4-6 minutes (time will depend on heat and thickness of zucchini). When zucchini has distinct grill marks and is softening, turn over. Cook an additional 3-4 minutes until cooked through. Serve immediately.

As my garden is now producing mass quantities of zucchini, we decided to give this a try for dinner tonight. It was delicious! We only marinated the zucchini for 30 min., and it was good, but I think that it would be a lot better if we had more time. We will be making this again. Thanks for the recipe!

I make this all the time minus the honey, YUM! My husband who doesn’t even like zucchini will eat it when I grill it like this.

Very easy to make. It was good, but I think it could have been better, I just don’t know what should be changed to make it more to my liking.

These were so easy to make and I liked that they had a lot of flavor without much effort. A good side dish that is easy to put together.
