Description

The whole wheat flour and poppy seeds give this scone a great texture without being heavy and the lemon flavor is perfection. I think I may have a new favorite scone.

Ingredients

  • 1-½ cup All-purpose Flour
  • 1 cup Whole Wheat Flour
  • ½ cups Sugar
  • 2 teaspoons Baking Powder
  • ½ teaspoons Baking Soda
  • 1 Tablespoon Poppy Seeds
  • ½ cups Butter
  • 1 cup Sour Cream
  • 1 whole Egg
  • 3 Tablespoons Lemon Juice
  • 1 Tablespoon Lemon Zest

  • FOR THE GLAZE:
  • ½ cups Powdered Sugar
  • 1 Tablespoon Lemon Juice

Preparation

Preheat oven to 375 degrees. In a large mixing bowl, combine flours, sugar, baking powder, baking soda, and poppy seeds. Cut butter in until crumbly. In a small bowl, combine sour cream, egg, lemon juice and zest. Stir sour cream mixture into the flour mixture. Mixture will be dry.

Turn dough out onto a lightly floured surface and knead a few times until all ingredients are combined. Divide dough in half and pat into two six-inch circles. Place on a greased or lined baking sheet. Cut each circle into six wedges. Bake for 15 minutes or until scones are lightly browned around the edges.

Mix powdered sugar and lemon juice for glaze and drizzle over baked scones. Serve warm or cool.

Tried these tonight and made them exactly by the recipe – absolutely delicious. I definitely could taste the lemon flavor in mine!

I wanted a quick throw together scone recipe to make for a friend coming over for coffee. I skipped the all purpose flour and just used all whole wheat, I didn’t have any poppyseeds, added blueberries. Thought lemon & blueberries sounded good. Couldn’t taste the lemon in the scone itself, but maybe that was because using all ww flour overpowered it..not sure. The icing was delish and I just used half the recipe and glazed a little over each scone. My husband really enjoyed these and so did my friend. Not too sweet, but hearty and healthy. I have poppy seeds on my grocery list so I will for sure give these another try with the original recipe.
