Description

Tastes delicious but also more healthy for you.

Ingredients

  • 1-¾ cup Whole Wheat Flour
  • 1-¾ cup All-purpose Flour
  • ¼ cups White Sugar
  • ¼ cups Packed Light Brown Sugar
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • ¼ teaspoons Salt
  • 2 Tablespoons Ground Yellow Flaxseed Meal
  • 4 Tablespoons Old Fashion Oats
  • 6 Tablespoons Butter
  • 1 whole Large Egg
  • 1 cup Nonfat Buttermilk
  • 1 teaspoon Vanilla Extract
  • ¾ cups Dark Chocolate Chips

Preparation

Spray a cookie sheet with nonstick cooking spray. Preheat oven to 375F.

In a large mixing bowl, stir together flours, sugars, baking powder, baking soda, salt, flaxseed meal and oats. Cut in butter using two knives or a pastry blender, until mixture resembles coarse crumbs.

In a small bowl, whisk egg, buttermilk and vanilla together. Pour into dry ingredients. Mix until dough is moist. Stir in chocolate chips. Turn dough out onto a lightly floured surface, kneading two or three times. Divide dough in half.

Pat each half into a circle, about 6 inches across. Cut dough into 6 wedges. Transfer to the prepared cookie sheet. Bake at 375 on middle rack of oven for 20-22 minutes.

NOTES:
In the past, I have also used all flaxseed instead of oats so if you want to try that version, just use 6 tablespoons of flaxseed. It tasted just as good. More pictures at the link.
