Description

Tart berries and crunchy nuts make these muffins delicious and healthy.

Ingredients

  • 1 cup Dried Berries (recommend Cranberries, Cherries, Blueberries)
  • 1-½ cup Orange Juice
  • 2 cups Whole Wheat Flour
  • ⅔ cups Sugar
  • 2 teaspoons Baking Powder
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • ½ cups Nonfat Greek Yogurt
  • 2 teaspoons Vanilla Extract
  • 2 Tablespoons Orange Zest
  • ½ cups Shelled Nuts (Pistachios, Walnuts, Almonds)

Preparation

1. Add dried berries and orange juice into a large bowl and let it sit for 1-3 hours.

2. Preheat oven to 375 F and lightly grease a 12-count standard size muffin pan.

2. Add flour, sugar, baking powder, baking soda, and salt into a large bowl and whisk them together.

3. In a separate bowl, add Greek yogurt, vanilla and orange zest and stir to combine. Strain the berries to separate them from the orange juice and add all of the orange juice into the yogurt mixture.

4. Add the Greek yogurt mixture into the dry ingredients and stir until incorporated. Fold in strained berries.

6. Chop the nuts into small pieces and set them aside for a moment.

7. Fill muffin cups to about 3/4 full with the batter. Top with nut pieces.

8. Bake for about 23-27 minutes or until a toothpick inserted in the middle of a muffin comes out clean. Enjoy!
