This is not your usual cornbread! This could be dessert! The Baldpate Inn is located in Estes Park, Colorado. All of their food is homemade. One time on a family vacation, I bought a small book called Baldpate Collections, which includes some of the Inn’s famous favorite recipes.
O.M.G. this is so good!
Preheat oven to 350 degrees. Using an electric mixer, cream butter and sugar, then add eggs one at a time. Gradually, mix in corn and cheeses. Stir in the remaining ingredients. Spread evenly into a greased 9×13 cake pan. Place in the oven, close door and IMMEDIATELY reduce oven temperature to 300 degrees. Bake one hour. When it’s done, the top will still seem moist-looking, not dry as a cake would appear. The center should be set, not gooey. Serve warm.

You will NOT be dissappointed…I guarantee! This cornbread makes me happy! (can cornbread do that?)

This cornbread is to die for if you like it sweet like we do. I will look no farther!
