What’s a teacake, you ask? Well, let’s put it this way: the English eat biscuits with their (hot) tea and true Southerners eat teacakes with their (iced) tea. Imagine if a scone and a sugar cookie had a baby. That baby would be a teacake.
Note on ingredients: if the dough is too dry, simply add more water, one tablespoon at a time, until the right consistency is reached. The dough is supposed to very stiff.
Dump all the ingredients into a bowl and mix thoroughly. Once you’re done, you can do one of a few things (choose your own adventure!):
a. Roll 1″ balls and bake immediately.
b. Combine the dough into a cookie loaf (as I like to call it) and wrap it in aluminum foil. Place in the freezer and watch Pulp Fiction (or another cult classic movie you’ve never seen before) while waiting for the dough to harden.
c. Separate the dough and roll cylindrically, store-bought style. Wrap in aluminum foil, place in the freezer and forget about it until one day when a sad friend comes over and needs cookie dough love. Retrieve from freezer and either bake or eat raw. This stuff stays good for weeks.
Bake at 325ºF for 12-15 minutes. Sprinkle with powdered sugar. Enjoy with with someone you love.

Hi piggledy! Thank you so much for your comment–I’m sorry I’m just now seeing it. I completely agree with you. If a person doesn’t know what they’re about to eat, chances are they might be too surprised and not appreciate it. I hope you do give the teacakes a try and let me know what you think!

These look so interesting to me – I served tiny scones at a realtors’ open a couple of years ago, and found some in the waste basket later – folks who thought they were cookies were disappointed when they weren’t sweet! As long as people know what it is they are eating, they can appreciate it, but a surprise like a cookie with very little sugar can be a shock. I’ll add these to my list of good things to try.
