Description

Donuts made from sweet potatoes and yogurt and then topped with white chocolate and mini marshmallows.

Ingredients

  • ½ cups Butter
  • ⅔ cups Brown Sugar
  • 1 whole Egg
  • ⅔ cups Vanilla Yogurt
  • 1 cup Sweet Potato, Cooked And Mashed
  • ½ teaspoons Salt
  • 2 teaspoons Cinnamon
  • ½ teaspoons Nutmeg
  • 1-½ teaspoon Baking Powder
  • 1-½ teaspoon Baking Soda
  • 2 cups Flour
  • 1 cup White Chocolate Chips, Melted
  • ½ cups Mini Marshmallow Bits

Preparation

Preheat your oven to 375 F. Have your donut pan handy.

In a large bowl, cream butter and sugar until light and fluffy. Add the egg, yogurt, mashed sweet potato and salt and cream again. Set aside.

Sift together the cinnamon, nutmeg, baking soda, baking powder and flour. Slowly start to mix the flour into the butter mixture.

Place donut batter in a plastic bag and cut the tip off. Pipe into a donut pan, filling them half full. Bake at 375 F for 10 minutes. Remove from the oven and let them cool in the pan for 2-3 minutes before gently removing them to a wire rack to cool completely.

Dip the tops of the cooled donuts in the melted white chocolate and sprinkle with the marshmallow bits. Let set. Store in a sealed container.
