Description

This banana bread is so moist and flavorful!

Ingredients

  • 1-½ cup All-purpose Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • 1 cup White Sugar
  • ½ cups Melted Butter (unsalted)
  • 1 teaspoon Vanilla Extract
  • 2 whole Eggs
  • 3-½ whole Bananas (sometimes I Use 4)
  • ½ cups Yogurt (Vanilla, Strawberry, Raspberry, Whatever)

Preparation

Preheat oven to 375 degrees (175 C). Grease a 9×5 loaf pan.

In one bowl, mix flour, baking soda, salt and set aside. In another bowl, mix sugar, butter and vanilla. Add eggs and mix well.

Mash bananas completely in a separate bowl.

Add sugar mixture to flour mixture and combine until smooth. Fold in yogurt , then bananas. Stir gently.

Empty into the loaf pan and smooth the top. Bake for 60 minutes or until a knife comes out clean (a few crumbs is okay, just not wet).

Remove to a wire rack and let cool.

Wonderful! I have tried so many banana bread recipes and this is now my favorite. I love the idea of using yogurt and a little butter rather than lots of oil like some recipes. Much healthier and less fattening. You may want to add the words “yogurt” or “lower fat” in the title for the searchers looking for healthier versions. Thanks again for posting.
