Description

Chocolate chip muffins infused with orange juice and orange zest!

Ingredients

  • FOR THE MUFFINS:
  • 2 cups Flour
  • 1 Tablespoon Baking Powder
  • ½ teaspoons Salt
  • 1 cup Mini Chocolate Chips
  • 2 whole Eggs
  • ½ cups Sugar
  • ½ cups Milk
  • 1 Tablespoon Orange Zest
  • ½ cups Orange Juice
  • ¼ cups Vegetable Oil
  • FOR THE TOPPING:
  • ½ cups Flour
  • ½ cups Sugar
  • ⅓ cups Cold Butter Cubed

Preparation

Preheat oven to 400 F. Line a 12 cup muffin tin with liners and set aside.

In a large bowl, whisk together flour, baking powder and salt. Stir in chocolate chips. Make a well in the center of the cry ingredients and set the bowl aside.

In a separate large bowl, combine eggs, sugar, milk, orange zest, orange juice and oil. Add egg mixture to the center of the flour bowl. Stir until dry ingredients are just moistened.

Fill each muffin cup about ¼ full. Set aside.

For the streusel topping, combine flour and sugar in a bowl. Add cold butter and blend with a pasty cutter or two forks until mixture resembles coarse meal. Sprinkle the top of each muffin with streusel topping.

Bake for 18 minutes. Then remove the pan from the oven and let muffins cool in pan for about 5 minutes before removing them.
