Description

Skinny Mini Lemony Poppy Seed Muffins—healthy and only sweetened with honey!

Ingredients

  • ½ cups Greek Yogurt, Plain
  • ¼ cups Coconut Oil, Melted
  • 1 whole Large Egg
  • 1 Tablespoon Almond Milk
  • ½ teaspoons Pure Vanilla Extract
  • ½ cups Honey
  • 1 whole Lemon, Zest And Juice
  • ¼ teaspoons Baking Powder
  • ½ teaspoons Baking Soda
  • 1 Tablespoon Poppy Seeds
  • ¼ teaspoons Pink Salt
  • 1 cup Spelt Flour

Preparation

Preheat oven to 400 F. Line a 24-count mini muffin tin with paper liners then spray the liners with baking spray. Set aside. Make sure to spray your muffins liners well or else you may lose the bottoms of your muffins to the liners! You can also bake these without liners if you wish in just a greased pan.

In a medium bowl, mix together the Greek yogurt, oil and egg. Stir together until well incorporated. Add the almond milk, vanilla, honey and lemon zest and juice and mix. Add the rest of the ingredients and mix until just combined. Be careful to not over mix, so your muffins stay soft and fluffy. The mixture should be thick, but still runny.

Spoon the mixture into the prepared pan and bake at 400 F for 9-10 minutes. Enjoy!
