Description

Warning: you cannot stop at one piece.

Ingredients

  • 8 ounces, weight Self Raising Flour
  • 1 teaspoon Baking Soda
  • ¾ teaspoons Ground Cinnamon
  • 2 whole Eggs
  • 1-¼ cup White Sugar
  • ½ cups Vegetable Oil
  • 3 whole Overly Ripe Bananas, Mashed
  • 2 Tablespoons Greek-Style Yoghurt
  • 1 teaspoon Vanilla Extract
  • 3 ounces, weight Toasted Walnuts, Roughly Chopped

Preparation

Preheat oven to 300ºF. Grease and line the base and sides of a 3″ x 4″ x 11″ loaf pan.

Sift all dry ingredients into a bowl.

In a separate bowl and using an electric mixer, mix eggs and sugar on high speed until thick and pale. Reduce speed to medium, and drizzle in oil in a slow, steady stream. Add bananas, yoghurt and vanilla and beat until well combined. Add flour mixture and fold through using a large wooden spoon.

Pour batter into prepared pan and scatter the walnuts on top.

Bake for about 1 hour, or until a skewer inserted into the centre of the bread comes out clean.

Cool bread in pan for 10 minutes before turning out onto a wire rack to cool.

Serve in thick slices, either warm or at room temperature.

Notes:
1. The total amount of mashed banana should be about 1 1/2 cups.
2. If you like, you can double the amount of toasted walnuts and fold half through the batter and sprinkle the other half on top.
