Description

Cornmeal baked donuts with bacon and green onions, topped with goat cheese frosting and even more bacon!

Ingredients

  • FOR THE DONUTS:
  • ½ cups Milk
  • 2 whole Eggs
  • 2 Tablespoons Vegetable Oil
  • 2 teaspoons Sugar
  • ⅔ cups Flour
  • ⅓ cups Yellow Cornmeal
  • 1 teaspoon Baking Powder
  • ¼ teaspoons Salt
  • 5 Tablespoons Bacon Bits, Divided
  • 3 Tablespoons Chopped Green Onion
  • FOR THE FROSTING:
  • 6 ounces, weight Goat Cheese
  • 2 Tablespoons Milk
  • ½ teaspoons Chili Powder

Preparation

For the donuts:
Preheat oven to 350ºF. In a bowl whisk together the milk, eggs, oil and sugar. Gently fold in the flour, cornmeal, baking powder and salt until just combined. Fold in 3 tablespoons of bacon bits and green onions until just combined. Spray a donut pan with nonstick spray and evenly distribute the batter among the molds. Bake at 350ºF for 8-10 minutes until just set. Let cool completely before frosting.

For the frosting:
Let the goat cheese come to room temperature while the donuts are baking. Whisk in the milk 1 teaspoon at a time until it becomes smooth and the consistency of spreadable frosting. Add in the chili powder or pepper and stir to combine.

When the donuts are cooled, spread frosting evenly on the top of each donut. Sprinkle with the remaining bacon bits.
