This makes 3 dozen biscuits so it’s perfect for a crowd!
Preheat oven to 450 F. Spray a baking sheet with non-stick cooking spray.
Cook sausage in a large skillet over medium heat until browned and crumbled. Remove from skillet and drain grease.
In a large bowl cut shortening into the self-rising flour with a pastry blender or fork until mixture resembles coarse pea size crumbs. Stir in sausage and cheese. Add buttermilk and stir with a fork until moist dough forms.
Drop dough by heaping teaspoonfuls onto the prepared baking sheet. Bake for 12 minutes or until golden brown. Remove from oven. Brush hot biscuits with the melted butter.
