An oldie but a goodie and so, so simple. I remember making these with my mum as a child, so that’s how simple they are. Very quick to make when you realize you have no cakes for your husband’s cuppa tea at lunch time! You can also add any combination of fruit or spices to them to make different flavours.
Please don’t let the name put you off, they are called Rock Cakes because of their rocky look
(I think!).
Preheat oven to 200°C or 400°F.
Sift the self raising flour into a bowl and then rub in the butter finely so it resembles fine crumbs. Add sugar, mixed fruit, beaten egg, and milk, starting with half the milk and then adding more as needed. It should mix into a stiff batter; if it is not coming together, add more milk 1 teaspoon at a time until you get the desired consistency (it won’t be a wet mixture).
Place mixture into about 10 mounds onto a lined baking sheet. If desired, sprinkle more sugar on top before baking.
Bake for 15–20 minutes until golden brown.
