Description

Can the best bran muffins I’ve ever had be the healthiest too? I was laughing with a friend the other day as I debated whether or not to have the “healthy cupcake” for dessert saying it was like going on a blind date and being told they have a great personality. This is the only muffin I make now.

Ingredients

  • 3 whole Eggs (or 6 Egg Whites)
  • 1 cup Honey
  • 1-¼ cup Applesauce (or Substitute Grated Zucchini Or 1 Cup Oil)
  • 3 cups Orange Juice (or Soy/almond Milk)
  • 1 teaspoon Vanilla
  • 3 teaspoons Baking Soda
  • 3 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 3 cups Whole Wheat Flour
  • 1-½ cup Raw Wheat Germ
  • 1-½ cup Raw Bran
  • 1-½ cup Fruit, Fresh Or Frozen (Blueberries, Cranberries, Raspberries, Etc.)

Preparation

Beat eggs. Add honey, apple sauce, orange juice, and vanilla. Mix together. Pour in baking soda, baking powder, and salt. Mix in all the flour, then the germ and bran. When thoroughly incorporated, let stand for 1 hour.

Preheat oven to 350ºF. Grease a muffin tin or place liners. Mix in the berries/fruit and pour out into muffin tins. Bake for 25 minutes and check to see if they’re done. Press on the top and see if it bounces back. These are a very moist muffin so you don’t want to under bake them. Enjoy!
