A moist yummy banana bread that is made with gluten free flour.
Preaheat oven to 350ºF. In a large bowl or the bowl of your stand mixer, mix together the oil and sugar. Add the eggs, bananas, and vanilla extract and mix well.
In a separate bowl, mix together all of the dry ingredients (everything else except the nuts) with a whisk. Add the dry mixture to the wet mixture and mix until blended. Add the nuts and stir until they are incorporated.
Divide mixture between two medium loaf pans and bake for 55–65 minutes or until a nice crust has formed and a toothpick comes out clean. Cool in pans and slice and serve. Or slice almost immediately and begin to devour. Your choice.
