Description

Sort of like the seasonal scones from the place that starts with an “S” and ends with a “bucks” …

Ingredients

  • 1-¾ cup All-purpose Flour
  • 1 teaspoon Pumpkin Pie Spice
  • 1 teaspoon Ground Cinnamon
  • ½ teaspoons Baking Soda
  • 1 teaspoon Baking Powder
  • 2 Tablespoons Vegetable Oil
  • ⅔ cups Sugar
  • ½ teaspoons Pure Vanilla Extract
  • 1-⅓ cup Pumpkin Puree
  • 2 whole Eggs
  • 1 cup Mini Dark Chocolate Chips

Preparation

Preheat oven to 350 F. Line two 12-count standard size muffin pans with 18 muffin liners.

Mix flour, pumpkin pie spice, cinnamon, baking soda, and baking powder in a medium bowl.

In a larger mixing bowl, combine oil, sugar, vanilla, pumpkin puree and eggs. Gently fold dry ingredients into wet and stir until just combined. Fold in chocolate chips.

Distribute batter among baking cups, filling each about 3/4 full. Bake for 20-25 minutes, until a toothpick inserted into the center of a muffin comes out clean. Remove from oven and transfer to a wire rack to cool completely before storing.
