Description

Make these for breakfast and your house will smell fabulous all day! The perfect combination of pumpkin and chocolate chip for moist little muffins!

Ingredients

  • 1 cup Canned Pure Pumpkin Puree
  • 1 cup Sugar
  • ½ cups Coconut Oil, Softened But Not Melted
  • 2  Eggs
  • 1-⅔ cup Flour
  • 1 Tablespoon Pumpkin Pie Spice
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • ¼ teaspoons Salt
  • 1 cup Chocolate Chips

Preparation

Mix wet (pumpkin, sugar, oil, eggs) and dry (flour, pumpkin pie spice, baking powder, baking soda, salt, chocolate chips) ingredients separately and then mix together. Be careful not to overmix or you will have tough muffins!

Pour into greased muffin tins. Bake at 350ºF for 20–25 minutes. Make sure to keep an eye on them and bake just until done.

Note: If you are making them into hearts, don’t fill the cups quite full. You get a few more muffins that way and the hearts are better defined!
