These light, tasty puffs are yummy and a great alternative to bread. You can even make these gluten-free, as the flour can be any type you wish. My mom would make these for me as a treat when I was little…..
Preheat oven to 300 degrees F.
Beat the egg whites with the cream of tartar until very stiff peaks form. Fold the cottage cheese, egg yolks, sugar, and flour into the beaten egg whites, very gently. I usually mix the remaining ingredients together first before folding them in, to minimize the impact to the whites.
Prepare 2 cookie sheets with either parchment paper or a very thin layer of oil. Drop the dough onto the cookie sheets by heaping tablespoonfuls. Mine are usually 1-2 heaping spoonfuls big.
Bake at 300 degrees for 30 minutes, until golden brown.
Makes about 10 puffs.
