A salty-sweet scone version with pears, Parmesan, chives and prosciutto to give your day a “swift kick in the pants” start!
Preheat oven to 400ºF.
Sift flour, baking powder, salt and pepper into a large bowl. Using your fingertips, work the butter into the flour until mixture resembles coarse crumbs. Gently combine chives, prosciutto, Parmesan and pears until well blended. Make a well in the center and gently mix in buttermilk. You want a sticky dough mess.
On a floured surface, pat down dough and cut into triangles. (The dough will be sticky, but you should still be able to form and handle it.) Add more flour if needed. Place on parchment-lined sheet, glaze with a bit of buttermilk and place in the oven. Bake for 10–12 minutes, or 15–20 minutes for larger scones!
