Our favorite Sunday brunch food, perfect with jam and butter or stuffed with tuna salad!
Preheat oven to 450ºF and spray a 6-cup popover pan with cooking spray. Set aside.
Lightly beat eggs in a bowl, and then add remaining ingredients and beat until the batter is smooth. Allow the batter to sit at room temperature for about 45 minutes.
Evenly divide the batter between the 6 popover cups (they should each be about 2/3 full). Bake for 15 minutes and then reduce the heat to 325ºF and bake for another 30 minutes, or until the popovers are poofy and golden brown. DO NOT OPEN THE OVEN UNTIL THE POPOVERS ARE FINISHED.
Serve while hot with jam and butter or allow to cool, cut off the tops and fill with tuna salad for a nice lunch!
