Description

Packed with healthy ingredients (mostly!), this treat is completely mom-approved. The best part about it is the kids won’t know! A neighborhood favorite for kids and adults alike for over 10 years!

Ingredients

  • 1-½ cup All-purpose Flour
  • 1 cup Whole Wheat Flour
  • 2 Tablespoons Ground Flax Meal Or Wheat Germ
  • 1 Tablespoon Baking Powder
  • ¾ teaspoons Salt
  • ¼ teaspoons Cinnamon
  • 1 cup Milk (or Milk Alternative For Dairy Free)
  • ¼ cups Water
  • ½ cups Granulated Sugar
  • ½ cups Brown Sugar
  • 3 whole Ripe Bananas (May Use 2 If They Are Large!)
  • ¾ cups Creamy Peanut Butter (I Use Jiff!)
  • 1 teaspoon Vanilla Extract
  • 1 whole Egg
  • 1 cup Dark Chocolate Chips (mini Chips Are Really Good Too!)

Preparation

Preheat oven to 350º. Spray mini muffin tins with cooking spray. The batch makes about 40 mini muffins.

In a large bowl stir together the flours, flax meal, baking powder, salt and cinnamon. In a medium bowl mix the milk and water with the sugars, banana, peanut butter, vanilla and egg.

Add the chocolate chips to the dry ingredients and stir to evenly distribute. Add the wet ingredients to the dry ingredients, stirring just until combined, making sure not to over-mix.

Spoon the batter into the mini muffin tins and bake for about 16 minutes, or until muffins are browned.

Remove to a wire rack and cool. Enjoy!

Loved these! But of course I love anything with peanut butter & choco chips together. One suggestion: these might benefit from some added oil in the batter, because they stuck to the paper liners quite badly. I thought the oil from the peanut butter would be enough, but evidently not.

Excellent! Not too sweet. I made regular muffins and not mini muffins, and they needed to bake about 21 minutes to account for the larger size.
