If I lived a day without peanut butter, it would be the saddest day of my life. My husband and I often fight for the last scrape of peanut butter from the oversized jar of our favorite brand. Given the choice, I would pretty much slather it on, or in anything, including this apple bread.
For the bread, mix all of the wet ingredients and fruit together in a large bowl. In a large bowl mix all of the dry ingredients together, and then transfer to the large wet ingredient bowl, folding gently to combine. Pour the bread mixture into a prepared loaf pan. Set aside.
For the topping, combine all of the ingredients together in a small bowl (it will make a sticky crumble). Sprinkle on top of the bread mixture. Bake in a 350ºF oven for 50–55 minutes (or until the bread is firm to the touch, and lightly browned). Let cool slightly, slice and enjoy!

I’m with you on the peanut butter scale. I’d eat a shingle if it had peanut butter on it!

I recently made a gluten free bread that was very similar to this. My peanut flavor came from using 1/2 of peanut flour in place of the gluten free flour mix. I thought I was crazy for mixing apples, bananas and peanut but now I see I’m in good company!
