Description

The flavor of a peach pie and a cinnamon doughnut all rolled into one muffin. Enjoy summer’s bounty of fresh peaches in this easy recipe.

Ingredients

  • FOR THE MUFFINS:
  • 1-¾ cup Flour
  • ¾ cups Sugar
  • 1-½ teaspoon Baking Powder
  • ½ teaspoons Nutmeg
  • ½ teaspoons Cinnamon
  • ¼ teaspoons Ginger
  • ⅔ cups Milk
  • ⅓ cups Oil
  • 1  Egg, Lightly Beaten
  • ½ teaspoons Vanilla
  • 1 cup Peeled, Chopped Peaches
  • FOR THE TOPPING:
  • ⅓ cups Sugar
  • 1 teaspoon Cinnamon
  • 3 Tablespoons Butter, Melted
  • Powdered Sugar Glaze, For Drizzling (optional)

Preparation

Preheat oven to 350ºF. Line a 12-cup muffin tin with baking liners.

In a large bowl, whisk flour, sugar, baking powder, nutmeg, cinnamon, and ginger. Make a well in the flour mixture and add milk, oil, egg, and vanilla. Gently whisk (don’t vigorously beat) everything together. Stir in peaches.

Fill muffin cups almost to the top with batter. Bake 20–25 minutes. Cool on wire rack 10 minutes.

Mix together sugar and cinnamon for topping. Dip the top of each muffin in the melted butter, then the sugar/cinnamon mixture. Sprinkle any remaining sugar/cinnamon mixture over muffins.

Drizzle with powdered sugar glaze when muffins are cool, if desired.
